Modulation of essential fatty acid levels in coconut oil with flaxseed oil

Coconut oil (CO) is a popular cooking medium but its lack of essential fatty acids (FA) health concern. Therefore, the aim this work was to improve FA profile CO by blending with flaxseed (FO). Blends various percentages FO were prepared and studied for physicochemical characterization, thermal long-term storage stability. The results indicated that blends made favorable alterations in composition without adverse effects oxidative stability they resisted secondary deterioration up two hours at 180 ºC. blend highest percentage stable nine months. THP-1 cell line studies showed ω-3 from incorporated into cells no effect on viability inflammatory markers remained unaltered. Thus, could be stored least months used as when prolonged heating not involved.
